Originating from Apulia region, in Southern Italy, Chef Maurizio learned his trade in the kitchen at his parent’s restaurant on the shores of the Adriatic Sea, where he began his culinary journey that has taken him to Italy, France, USA, China and Indonesia. After four successful years heading Il Ristorante at Bulgari Resort Bali and another four overlooking the award-winning dining venues at the Ritz Carlton Reserve Mandapa in Ubud, Chef Maurizio decided it was time to fully express his culinary style.

“It was a natural evolution. After more than ten years working for Ritz Carlton and Bulgari, I realized I was ready to open my own restaurant… My true passion is cooking, I belong in the kitchen and I want to share this love with my team and guests”. The restaurant is named after his short name, “MAURI”, as his family and friends calls him. A name that resonate as a sign of intimacy and trust which he aims to create with his clients.

de Cuisine

Chef Wira is from Singaraja region in North Bali. He began his career in 5 stars properties in Bali such as Bvlgari Hotel where he first meet Chef Maurizio who was then heading Il Ristorante. He later joined him again at Mandapa, A Ritz Carlton Reserve, as his Sous Chef for more than 3 years working together.

After 9 years of culinary journey in the hotel industry, he decided to join Chef Maurizio again this time in the opening of MAURI Restaurant.

Wira is a talented Chef who has a deep understanding of Chef Maurizio’s vision. With his team, he manages to recreate Puglia’s taste using mainly local ingredients.

General
Manager

Originally from Kediri region, in East Java, Nono began his career in prestigious hotels such as Jumeirah Hotels & Resort Dubai where he lived 2 years. He continued his career at Bvlgari Bali where he worked with Chef Maurizio in Il Ristorante, followed by Mulia Hotel & Resort. He then joined again Chef Maurizio’s team as a Restaurant Manager in the widely acclaimed KUBU Restaurant at Mandapa, A Ritz Carlton Reserve, and later on for the Capella Ubud. After a succesful journey in hotels, he decided to join Chef Maurizio again for a new adventure MAURI Restaurant in this new adventure with Chef Maurizio to groom and lead the beautiful service team.

Sommelier

Originally from Tabanan, Surya started his career in Kuta then continued his journey at The Legian, Seminyak as Restaurant Waiter for 2 years and continued as Restaurant Captain for 3 years. He found his passion in wines and strengthened his experience at The Legian as Restaurant and Wine Supervisor for almost 2 years. Along his career, Surya got nominated as the Best Wine Sommelier at the Gastronomic 2016, Best 1st Wine Sommelier Bali in 2018, and have finished Wine Spirit Education Trust Level 1 in 2019 and Level 2 in 2020.
