Originally from Hino, a village on the shores of Lake Biwa where the famous Omi beef is produced. Chef Shige has worked in several Italian fine dining restaurants in Kyoto including Ristorante Italiano Chimera, a 1 Michelin star restaurant and was fondly passionate about Italian cuisine. Chef Maurizio has always been fascinated by Japanese culinary culture and have worked for 3 months at The Ritz Carlton Kyoto where he had the opportunity to discover the best of the Japanese cuisine. Their shared passion inspired this unique collaboration.
